1 vacuum soft packaging fish processing process
The choice of raw fish - the handling of raw fish - the cooking of seasoning - seasoning - air drying - inspection - frying - coloring - bagging - vacuum Sealing --- sterilization - cooling --- finished product inspection storage.
2 operating points
2.1 Selection of raw fish
Raw fish should be disease-free, injury-free, robust, and muscular and resilient. Specs from 600 grams to 1200 grams of squid are the best. Dead fish or stale fish are not used.
2.2 Raw fish processing
The live fish is scaled, the fish is opened with a squid machine, the viscera is removed, and rinsed.
2.3 cooking of seasoning liquid
Vacuum soft packaged fish seasoning liquid formula is: 0.5 grams of pepper; fresh ginger 0.5 grams; sugar 6.0 grams; 3.5 grams of salt; cloves 1.2 grams; 0.9 grams of cinnamon; licorice 0.9 grams; fennel 1.2 grams; 2.8 grams of pepper; water 82.5 grams; According to the weight of the processed fish, cooking is performed with slow fire. After the water temperature reaches 100c, cook for 20-30 minutes and then stop the fire. Cool naturally, filter it to the residue and reserve it.
2.4 Seasoning
It is best to soak the fish with a seasoning liquid, and it is best to completely soak the fish body with the soaking solution. The soaking water temperature is 2c or less, and the room temperature is controlled within the range of 8-12c. Soaking time is 48 hours.
2.5 air dry
After the fish is soaked, they are transferred to a cold room for freezing and then transferred to the wind room for air drying. In general, it needs to be repeated three times.
