They are widely used in the food industry, but many factors such as temperature, light and oxygen will affect Chlorophyll stability. The determination of chlorophyll content in stem tumor mustard by using chlorophyll meter and its spectral characteristics and various factors affecting the stability of chlorophyll were studied to provide reference for the further development and utilization of tumorous stem mustard.

A certain amount of chlorophyll acetone solution was taken and wavelength scanning was performed in the visible light region of 400 to 760 nm. The chlorophyll-acetone solution from the stem mustard leaves had two absorption peaks in the visible light region, one of which was at the 655nm wavelength in the red portion and the other was at the 420nm wavelength in the blue-violet region. The chlorophylls of higher plants are classified into chlorophyll a and chlorophyll b, and their absorption spectra overlap each other in the visible light region.
